If you’re craving these fluffy, jiggly Japanese pancakes we have good news: we finally found a restaurant in Seattle with soufflé pancakes!

Cafe Remix is known for their cloud-like soufflé pancakes. Located in Seattle’s Belltown neighborhood, they just had their grand opening in early February 2025. Calling themselves “Seattle’s K-food destination,” Cafe Remix is offering more than just the pancakes. They also serve bento boxes, kimbap, fish cakes, homemade long rice cakes, and colorful, creative caffeinated drinks. In addition you can also shop for Korean snacks and instant noodles to take home.
As for the soufflé pancakes, you can get yours plain or dressed up with flavors such as matcha strawberry, ube corn, and strawberry mango. If you feel the need to give the plate a satisfying little jiggle before digging in, we won’t judge.
Cafe Remix is a small, family-owned business. Keep in mind that if you order their popular soufflé pancakes they take at least 20 minutes to make, and often longer if it’s busy.
