Seattle’s new boutique hotel Popolus opened in May 2025, just in time for us to spend our summer on Firn: the only rooftop bar in Pioneer Square. It will quickly become a go-to spot for drinks after a game at nearby Lumen Field or T-Mobile Park. In addition to their rooftop bar, Populus Seattle also houses 120 rooms, a restaurant, a cafe, and over 300 pieces of art in its historic building. For every night you stay, the hotel plants a tree—and that’s just one of their eco-friendly initiatives.

2. 1 Hotel Seattle, South Lake Union
Another new boutique hotel in Seattle that just opened in May 2025, 1 Hotel Seattle is a luxury hotel that describes itself as a “nature-inspired retreat.” Northwest greenery, Douglas fir beams, and a plant-filled patio are just a few of the lush natural touches. It houses 153 guest rooms (45 of those are suites), six event spaces including the Rainier Ballroom, the all-day Drift café and bar, and the signature restaurant La Loba led by James Beard Award finalist Chef Oscar Amador Edo. La Loba is a Spanish restaurant that uses local ingredients for a Pacific Northwest touch. The hotel sources everything from the coffee to the furnishings locally, and even encourages guests to participate in the 1 Less Thing program which involves leaving gently-used clothing behind for donation to local nonprofit Mary’s Place.
