Blotto is coming back to Seattle—but under a new name.
The pizzeria, which opened in 2021 to long lines and strong acclaim, closed less than three years later when its lease expired and the building was set to be sold. Now, the team behind it is planning a return as Starla’s.
After the closure, chef Jordan Koplowitz and co-owner Christy Wyble moved to Bellingham and opened what they call “Starla’s 1.0.” Koplowitz has since earned a spot on the longlist for a James Beard Award.
Now they’re looking to return south, with plans to open in late 2026 or early 2027. “We can’t wait to be back!” they told The Seattle Times, adding that the new restaurant will feature table service and an expanded menu. “Third time’s the charm, right?!”
The decision to leave Bellingham wasn’t easy. The owners said they “do truly love Bellingham” and that “the support and friendliness … blew us away.” But the kitchen there proved “far too small to match pizza-demand.”
Ultimately, Seattle pulled them back. They said they missed the city’s “tight-knit service industry” and realized that if they’re “putting down serious roots … we want that commitment to be with Seattle.”
