Capitol Hill is about to get a fresh slice of Rome. A new pizzeria called Roma Roma is opening this Friday, bringing a style of pizza that’s everyday fare in Italy but still a rarity in Seattle.
Before the official debut, Roma Roma is hosting a public soft opening with free pizza on Thursday, February 5, from 4 to 9 pm (or until they sell out). Slices are on the house, while drinks will be available for purchase. If you plan to go, be prepared to wait in line.
Roma Roma specializes in naturally leavened, Roman-style pizza by the slice, also known as pizza al taglio. Think airy, long-fermented sourdough crust with a texture the owners describe as “crispy and bubbly.” Eater has already dubbed it “probably the city’s only pizza al taglio counter,” highlighting just how unique this format is for Seattle.
The pizzeria is the passion project of longtime Seattle chef Forrest Brunton, who partnered with his brother Colin Brunton to bring Rome’s street-pizza tradition to Capitol Hill. Each day, Roma Roma plans to offer 8 to 10 different pizzas, drawing from a rotating lineup of nearly 100 toppings. Expect everything from classic and comforting to delightfully unexpected—like spicy boar bolognese, beet and goat cheese, or salumi with Thai green curry.
True to the Roman style, slices are cut to the size you want, mixed and matched from the day’s offerings, and priced by weight.
You’ll find Roma Roma at 1610 12th Ave, in the former Rachel’s Ginger Beer space. After Thursday’s giveaway, the grand opening runs from Friday, February 6 to Saturday, February 7 from 11 am to 11 pm (or until sellout). Find more details and updates on their website or Instagram.
