If you live in Seattle you may be familiar with The Pastry Project in Pioneer Square. Primarily a social enterprise that provides a free training program that helps individuals break into the baking industry, The Pastry Project is also popular in Seattle for its seasonal soft serve window and a baking kit subscription. Now co-owners Emily Kim and Heather Hodge have announced the launch of a new venture: a Pastry Project bakery! Soon you’ll be able to get your hands on The Pastry Project’s delicious confections three days a week.

When will The Pastry Project bakery open?
Excited? You don’t have long to wait. The Pastry Project announced that their new bakery will open this month! The opening day will be on Thursday, October 16, 2025. If you can’t make it on that day, they will also be open that following Friday and Saturday.
Where will the bakery be located?
The Pastry Project is located in Seattle’s historic Pioneer Square neighborhood. The new bakery will operate out of the same location. The address is 165 S. Main Street.
What will the bakery serve?
We already know quite a few of the menu items, at least for the bakery’s opening. The Pastry Project team said they “spent the last 6 months creating our dream opening menu.” The Pastry Project is already known for their cinnamon rolls and chocolate chip cookies, and both of those classics will be available on the menu. New items for the bakery include a maple pancake croissant, a crème brûlée croissant, and seasonal upside down fruit cakes topped with whipped cream and toffee sauce.
The bakery will offer breakfast items and savory food as well. The breakfast menu will include a yogurt bowl with homemade granola, passion fruit curd, and local honey as well as “a pillowy bran bread topped with a special whipped butter.” The savory food menu will feature items such as ham and cheese croissants and focaccia with olive and feta.
As for beverages, the bakery may not have a drink menu. There was no mention of coffee, tea, and the like in the opening announcement. We’ll update this post when we know more.
Will there be seating?
According to their announcement, this will be a walk-up bakery. If the bakery operates in the same way as their seasonal soft serve window, you can expect to line up outside the window to place a to-go order for your items. There isn’t currently any indoor or outdoor seating at The Pastry Project, although we’ll update this if that changes.
What will the bakery’s hours be?
The bakery will be open three days a week: Thursdays, Fridays, and Saturdays. Each day’s hours will be 9:00 a.m. to 1:00 p.m. Due to these limited hours and the popularity of their soft serve window, you might want to be prepared to wait in line. We will update this post if they expand their operating hours in the future.
