The only thing Seattleites love more than a good brewery is a waterfront brewery. Here Today Brewery & Kitchen, located just a three-minute walk from Olympic Sculpture Park on the Seattle waterfront, is sure to be a hit with locals and tourists alike. The brewery patio boasts views of the sculpture park as well as Puget Sound, and the interior has a playful vaporwave-inspired aeshetic.
Here Today is the latest creation of the co-owner of Navy Strength (a popular tiki bar in Belltown) Chris Elford, along with Dave Riddile and brewer Mario Cortes. It was meant to open in June 2021 but they ran into various delays… not to mention a pandemic. The brewery finally opened earlier this month on Saturday, October 8, 2022. It is currently operating under temporary opening hours (see below) but those will be expanded eventually.
In addition to the beer brewed on-site, the brewery offers natural wine and “choose your own adventure” cocktails. The latter allows you to customize any of the cocktails on the menu with a spirit of your choice (or enjoy one spirit-free if you prefer).
The brewery food menu captures the playful vibe of Here Today. There’s the typical bar food of hot dogs, burgers, and wings but you’ll also find vegan options, Impossible burgers, and bold punches of flavor from ingredients like kimchi slaw.
Of course, since it’s a Seattle brewery, Here Today offers a Seattle Dog (a hot dog loaded with cream cheese, fried jalapenos, and pickled onions) but have you ever heard of a Seattle Burger? We think it’s worth visiting just to try this concoction that actually uses a blend of cream cheese and goat cheese.
In conclusion, definitely bring your appetite. Bring your kids and your dog too! The brewery is open to ages under 21 until 8:00 p.m. and its patio is open to well-behaved dogs.
