A new cafe in Seattle’s Pioneer Square neighborhood is bringing Copenhagen vibes to the Emerald City. Open only on weekdays, Day Made Kaffe Bar offers a unique coffee experience that you won’t find anywhere else in Seattle. Day Made Kaffe Bar is a Copenhagen-style café serving specialty pour-overs, espresso drinks, matcha, pastries, and rotating seasonal soft-serve. Founded in 2025 by Ashley Day, the shop was created as a space centered on two essentials: great coffee and genuine human connection. It’s the perfect stop for anyone serious about their coffee (and if you’re in Seattle, chances are good that you are!). Their beans come from Coffee Collective in Copenhagen, and you won’t find flavored syrups on the menu (though a self-serve station offers simple syrup if you prefer a touch of sweetness).
Aside from the coffee, a standout on their compact menu is the seasonal soft serve. It’s usually only offered during the summer, but for this week only you can enjoy a limited-time holiday affogato (milk soft serve with espresso).They also feature pastries from the well-loved Seattle bakery Ben’s Bread.
A quick look at Day Made’s reviews on Yelp reveals the cafe to be an instant hit among coffee lovers. Aaron F. said Day Made is already one of the top 10 coffee shops in Seattle, saying in his review that the espresso tonic with apple juice was “a shockingly good combination of flavors I never knew I needed,” and adding that the cafe is “a nice place to get warm during the long grey winters in Seattle.” And Adriana O. praised the cafe’s high-quality single origin coffee and lack of syrups, saying that it’s “just really good coffee in a peaceful environment” that is “not to be missed for true coffee lovers.”
