If you’ve queued for a hand roll near Pike Place Market, Sugo Hand Roll Bar is about to make the trip north worthwhile. The Seattle-born concept opens its biggest location yet in Lynnwood on Saturday, November 7, with a 42-seat hand roll bar that the restaurant bills as the largest of its kind in the world.
The 54-seat space sits near Alderwood Mall at 3000 184th Street SW, Lynnwood, WA 98037. It opens daily from 11 a.m. to 9 p.m. Guests will walk past a Japanese-inspired sand garden and under a large tree installation indoors.
Whole fish, dry-aged in-house
The idea behind Sugo hasn’t changed: temaki made to order, handed from chef to guest and eaten right away, while the nori is still crisp and the rice warm. Lynnwood scales that up with the brand’s largest seafood selection to date, overseen by Executive Chef Kyu.
The kitchen will source fish from around the world, including specialty varieties flown in from Japan, plus seasonal catches from closer to home. Instead of relying on pre-portioned cuts, the team will butcher whole fish in-house and choose cuts for flavor, texture and fat content. A significant share of the seafood will also be dry-aged in-house for deeper flavor and a more refined texture.
Omakase in December: A private 12-seat omakase room opens in December 2026. The chef-led menu will follow seasonal ingredients and specialty seafood, with dishes that go beyond the regular hand roll lineup. The original Seattle location recently added its own omakase program.
Takeout and catering: Lynnwood gets a takeout menu designed for eating away from the restaurant, not a copy of the dine-in offering. It includes cut rolls, sashimi and chef selections. A separate catering program will serve offices, private events, homes and community gatherings.
