Seattle bagel lovers get ready! The super popular bagel pop-up, Hey Bagel, is opening a brand new permanent location this fall. The new shop location will be conveniently located in University Village, and its grand opening is scheduled for late November.
Not His First Bagel Rodeo
Hey Bagel is the delicious creation of Andrew Rubinstein. This is his second foray into the world of bagels here in Seattle. He successfully founded Rubenstein Bagels back in 2019 with the tagline “These are the bagels you’ve been looking for.” Rubinstein Bagels quickly opened multiple branches around Seattle, but even after that incredible success, Rubinstein decided to take a step back from that company to focus on his family life. And he sold Rubenstein Bagels to his business partner at the time.
Hands-On Wizardry
But that wasn’t the end of Rubinstein‘s bagel journey. He realized that he missed “the hands-on wizardry of managing the dough.” So, he started a comeback journey that has slowly gained popularity through Hey Bagel’s many pop-ups and online notoriety.
But this time Rubinstein is experimenting with his beloved bagels in a deliciously fresh way to ensure a better, more craveable bagel experience. He’s now using a whole new process without overnight baking. And even more unusual, the shop will be producing bagels throughout the day. This all means hotter, fresher, and crunchier bagels for a larger number of hungry customers. Hey Bagel lovers can look forward to bagels that are darker, perhaps burned in spots, and speckled with glorious blisters.
Organic Vegan Sourdough Goodness
True to form, Rubinstein continues to use heavenly sourdough as the base for his bagels. Plus, Hey Bagel will endeavor to utilize as many organic ingredients as possible. The flour is 100% organic and half of it is sourced from right here in Washington State. Most of the bagel toppings are organic as well. And even better news is that all bagels from Hey Bagel are vegan unless labelled as otherwise.
Fun, Friendly, Hey Bagel Vibes
Rubinstein says, “I want this to be an aspirational, fun, loving, and friendly experience for customers and staff to enjoy day after day.” And he’s ensuring that happens in the new shop. Fresh, warm bagels and bialys will be served up piping hot throughout the day. Dreams come true with Hey Bagel’s cream cheese bar filled with old familiar favorites and fun new flavors. Hey Bagel encourages customers to buy “at least three bagels and a tub of schmear to tear, dip, and share.”
However, there will not be a toaster on-site for customers to crisp up their tasty bagels. As Rubinstein stated to Secret Seattle, we’re “not toasting because the bagels will be so fresh and stand on their own.” A toaster isn’t even necessary for these crispy bagels!
The Perfect Breakfast Combo
Even without toasters and sandwiches, Hey Bagel is serving up the breakfast of champions. They’re pairing up with Anchorhead Coffee to deliver a piping hot cup of joe to all bagel lovers. Anchorhead Coffee is a local third wave coffee roaster serving up some of the best coffee in the region. (And you know that’s saying something here in Seattle!)
