After much anticipation, we finally have an opening date for Baiana, the buzzy new eatery by MasterChef Star Emme Ribeiro Collins coming to Pike Place Market this spring. The Seattle Times included the Brazilian restaurant among the 20 Seattle-area food and drink openings they’re most excited about in 2026. When we last wrote about Baiana in February, we shared that Chef Collins was hoping for an early March opening.
In an Instagram post announcing the original opening date (it has since been delayed), Baiana shared:
The wait is almost over. Baiana’s Grand Opening is April 30. It’s a little later than we originally hoped, but that’s how opening a restaurant goes…a few unexpected twists along the way. Thank you for all the excitement and patience. Seattle, get ready for the taste of Bahia!

Acclaimed chef Emme Ribeiro Collins is bringing Bahian Brazilian flavors to Seattle with her first permanent restaurant, Baiana, opening in Pike Place Market’s historic Pike’s Pit space. Known for her pop-up of the same name—named after her family’s home state of Bahia—the concept is now becoming a full brick-and-mortar, featuring a mix of fan favorites and new creations inspired by Northeastern Brazil’s blend of West African, Indigenous, and Portuguese influences.
The menu highlights traditional dishes like moqueca, a coconut milk and dendê oil seafood stew, and caruru, a slow-braised okra dish with peanut sauce, both served in customizable bowls with rice, vegetables, and add-ons. A standout is acarajé, a crispy black-eyed pea fritter with a soft interior, typically filled with peanut sauce, green tomato salad, and okra, with optional proteins like shrimp or chicken. Many dishes are naturally gluten- and dairy-free, with additional toppings and vegan options such as caramelized plantains available.
Baiana opens in spring 2026 at 1505 Pike Place (exact date TBD). The opening day hours will be 11 am to 7 pm.
